Pure Bred Highland Beef on the Menu!

Following our success with mutton from the rare Soay Sheep breed we have just taken delivery of a pure bred Highland bullock. This animal was bred at Woodneuk Farm and raised as part of the highland cattle fold grazing on the Gleniffer Braes Country Park where they are much admired by the visitors. These cattle are naturally reared and grass fed for most of the year. In winter they are fed on silage or hay with a little corn and sugar beet to ensure the correct balance of nutrients and minerals. No genetically modified products are used. Highland beef is lean, firm and well marbled which gives it flavour and succulence and yet retains a low fat and cholesterol content. This animal has been hung for over 3 weeks which will contribute to it’s delicious flavour so redolent of old fashioned beef. One of the most common remarks made when the beef is first tried is “ It’s just like beef used to taste.”
