In 1737 the imposing mansion which stood on the site was much reduced to its present size, though the glories of the location remained largely untouched. At the heart of the house is the restaurant in which Executive Chef, Andrew Shortman holds sway, producing dishes that vary from the exotic to the sublime. Start with the imaginative Terrine of land and Air, a mosaic of rabbit, pigeon, guinea fowl and wild boar, studded with pistachio nuts and served with a red onion marmalade and rocket leaf. Follow with crispy fillet of salmon with an orange butter sauce, but don't miss the pineapple tarte tatin which is exceptional. A good wine list draws from a wide range with house at £10.50.
