The menu is divided into the "The Land" and the "The Sea" with choices of the freshest of Scottish ingredients including haggis, Stornoway black pudding, Shetland monkfish, South Uist smoked salmon and Buccleuch Beef, as well as long forgotten ingredients such as kale and cairgein.
