THE biggest annual food and drink festival in the north of Scotland is under way. Highland Feast, which began on Friday, is a lively celebration of all the exceptional produce for which the area is famed. Now in its ninth year, the 17-day programme ranges from cookery demonstrations and special gourmet breaks to afternoon teas and late-night ceilidhs. At the Glenmoriston, we will host A Taste of the Highlands on October 10, with a tasting menu of dishes made using Highland produce. One that has proved popular recently is sea trout, kiwi and pancetta, with seared lettuce and pork jus. This week's main course is a simple version of that dish. Sea trout, like salmon, has beautiful pink flesh, which looks particularly good paired with the other colours in this dish. Some people consider sea trout to be superior to salmon, but I think the two fish are equally tasty. Duck is still in season and this week's starter makes use of it in crispy spring rolls with a tangy soy vinaigrette. Pudding is a treat for lovers of crème brûlée - and chocolate.
